In the meantime, do you know if port forwarding could help with the networking side of things?

Port forwarding is used to contact a server that is located behind a firewall doing NAT from outside.
The scenario described so far doesn't mention such a server. Hence, port forwarding is not required.



The nodes in question are on a separate electrical service than the one that services the gateway so a powerline adapter is not an option either unfortunately.

OK, I understand.
So, to reduce the pressure on your wi-fi you may at least use a squid and connect the squid box and the crunching boxes via cable.
As already mentioned, the squid can be installed on one of the crunchers, they provide much more power than necessary.
